PER SERVING (1 1/3 cups): 100 calories, 0.5g fat, 71mg sodium, 23.5g carbs, 2.5g fiber, 17g sugars, 1.5g protein - POINTS. value 2* Ingredients:
3 tablespoons orange juice, freshly squeezed |
1 tablespoon fresh mint, finely chopped |
2 teaspoons seasoned rice vinegar |
1 teaspoon granulated sugar |
1 2/3 cups cucumbers, peeled and diced |
1 cup red grapefruit, segments, chopped (if packaged, packed in juice and drained) |
3/4 cup strawberry, diced |
3/4 cup blueberries |
Directions:
1. In a small dish, combine orange juice, mint, vinegar, and sugar. Stir until blended. Set aside. 2. Place all other ingredients in a wide container. Pour orange juice mixture over the contents of the container and stir gently to coat. 3. Cover and refrigerate for at least 1 hour (overnight is best). Stir gently just before serving. Enjoy! |
