This is a version of heringsalat (herring salad), which is traditionally prepared with herring, apples, and raw onions. You can substitute smoked trout for herring. Serve with a well-chilled lager and Brown Beer Rye Bread. Garnish with dill sprigs. Ingredients:
2 cups finely diced granny smith apple (about 1 medium) |
1/2 cup chopped rio or other sweet onion |
1/4 cup chopped green onions |
1 teaspoon chopped fresh dill |
1/2 teaspoon sugar |
dash of freshly ground black pepper |
2 hard-cooked large eggs, finely chopped |
1 (12-ounce) jar kippered herring in wine sauce, drained and cut into 1/4-inch pieces |
1 cup thinly sliced english cucumber |
Directions:
1. Combine first 8 ingredients in a bowl. Cover and chill 4 hours. Serve salad over cucumber slices. |
