A favorite recipe of my mother. Have a little brewed coffee left over? Don't toss it! Make these instead. Ingredients:
3/4 cup butter |
1 1/2 cups brown sugar |
2 eggs |
1/3 cup coffee, the stronger the better |
3 cups flour |
1 teaspoon baking soda |
1/2 teaspoon baking soda |
1/2 teaspoon salt |
1 teaspoon nutmeg |
1 teaspoon cinnamon |
1/2 teaspoon clove |
2 cups raisins |
1 cup nuts, chopped |
Directions:
1. Cream together butter, brown sugar and eggs. 2. Mix in remaining ingredients. 3. Form dough into a log and bake on a greased cookie sheet in 400* oven for 10-12 minutes. 4. Slice with a pizza cutter while still warm, into 2” sections. |
