Herby Potato Corn Chowder |

I made this up one night. It's everything I like put all together in a soup! I hope you like it. :) Ingredients:
1 vidalia onion (small-med) |
4 idaho potatoes, peeled and cut in squares |
1 (15 1/4 ounce) can corn |
1 tablespoon parsley |
1 tablespoon basil |
1 tablespoon chives |
1 tablespoon marjoram |
1/2 teaspoon paprika |
1/2 teaspoon cumin |
1 teaspoon celery salt |
1 1/2 organic swanson chicken broth (box) |
1 1/2 cups heavy cream |
salt and pepper |
Directions:
1. chop onion and potatoes and place in pot on med heat until potatoes soft. 2. add all chicken broth - simmer for 10 minute. 3. add all herbs, spices, and corn. 4. after 10 min, place 1/3 of soup into blender - pour back into pot. 5. add heavy cream 10-15 min before serving - stir well. |
