This herb filled beer batter is a wonderful way to saute your fresh grown squash, green tomatoes, zucchini, crook neck yellow squash, sweet potatoes, red potatoes or white potatoes, onions . It is a zesty was to a flavor to your meal. Ingredients:

1 can beer |
2 farm fresh eggs |
2 cups sifted flour |
1 tsp old bay seasoning |
1 tsp pepper |
1 tsp thyme |
1 tsp rosemary |
1 tsp garlic salt |
1 tsp cayenne pepper |
(5 to 6) lbs of your favorite veggies sliced thin 1/4 inch thick |
squash |
zucchini |
sweet potatoe |
red potatoe |
white potatoe |
green tomatoe (not so thin) 1/2 inch thick |
onion sliced (not so thin) 1/2 inch thick |
2 cups cooking oil |
Directions:
1. In a large mixing bowl blend beer and eggs. 2. Add flour stir with whisk until blended. 3. Add seasonings. Set mixture aside. 4. In a saute pan heat 2 cups oil on medium heat (do not burn the oil) 5. Place cut veggies of like kind into beer batter and then one at a time into saute pan . Let them cook until golden brown on one side flip and then the other. remover from pan when golden brown on both sided. repeat with all veggies. Place cooked veggies on paper toweled plate to remove any excess oil salt if desired. 6. serves well with Ranch Salad dressing. |
