Herbed Tomatoes 'n' Green Beans |

This is a wonderful way to prepare fresh-picked green beans. Ingredients:
3 green onions, coarsely chopped |
2 garlic cloves, minced |
2 teaspoons olive oil |
1/2 lb fresh green beans, trimmed |
1/4 cup chicken broth |
2 medium tomatoes, diced |
1 tablespoon fresh oregano, minced |
1 tablespoon fresh parsley, minced |
1/8 teaspoon salt |
1/8 teaspoon pepper |
Directions:
1. In small skillet, saute onions and garlic in oil until tender. 2. Add beans and broth. 3. Bring to a boil. 4. Reduce heat; cover and simmer for 6-9 minutes or until crisp-tender. 5. Stir in tomatoes and seasonings; heat through. |
