Tasty side dish, low cal from Cooking Light. Ingredients:
18 slices tomatoes, 1/2 inch thick |
vegetable oil cooking spray |
6 tablespoons italian seasoned breadcrumbs |
1 1/2 tablespoons grated parmesan cheese |
2 teaspoons reduced-calorie margarine, melted |
1 teaspoon chopped fresh basil |
Directions:
1. Arrange tomato slices in a 15 x 10 x 1 inch jelly roll pan coated with cooking spray;, set aside. 2. Combine breadcrumbs and remaining ingredients, stir well. 3. Sprinkle breadcrumb mixture over tomato slices. 4. Bake at 350f degrees for 10 to 12 minutes or until thoroughly heated. |
