Ingredients:
3/4 teaspoon(s) dried rosemary, crushed |
1 teaspoon(s) dried whole thyme |
2 tablespoon(s) fresh parsley |
4 medium baking potatoes, cut in 1/4 slices (1.5 lbs) |
2 medium white onions, cut in 1/4 slices (12 oz) |
1 tablespoon(s) olive oil |
5 plum tomatoes, sliced (1 lb) |
1/2 teaspoon(s) salt |
Directions:
1. Coat baking dish with cooking spray. Layer half each of potatoes, onions, and tomatoes. Sprinkle with half each salt, thyme, and rosemary. Repeat layers. Drizzle with olive oil. Cover and bake at 425 degrees 35-40 min or til tender. Sprinkle with parsley. |
