Fresh vegetabled and a lite vinaigrette give this salad a lively flavor. Ingredients:
1 1/2 lbs red potatoes (about 8 potatoes), cut into cubes |
1/2 cup lite italian dressing |
1/2 tbsp spicy brown mustard |
1 tbsp chopped fresh parsley |
1 tsp garlic salt |
1 tsp ground black pepper |
1/2 cup chopped red bell pepper |
1/2 cup chopped green pepper |
1/2 sliced green onions. |
Directions:
1. In a large pot, cook potatoes in boiling water until tender, about 10 min. Do not over cook. Drain well and let cool. 2. Cut potatoes into bite-size pieces and place in medium bowl. 3. In a small bowl, combine dressing , mustard, parsley snd seasonings, pour over potatoes and toss well. 4. Carefully stir in bell peppers and green onions. Cover and chill til ready to serve. |
