Easy and great for BBQ's From Pol Martin Cookbook. Ingredients:
4 large potatoes, cooked in skins peeled and diced |
1 onion, finely chopped |
2 hard-boiled eggs, chopped |
2 tablespoons fresh parsley, chopped |
1 teaspoon fresh tarragon, chopped |
3 tablespoons mayonnaise |
1/4 lemon, juice of |
salt, to taste |
black pepper, to taste |
Directions:
1. place potatoes, onions and eggs in large bowl. 2. add parsley and tarragon, and mix well. 3. add mayonnaise and lemon juice, mix well. 4. season, mix once more and serve. |
