This is another good one from the Low-Fat Living for Real People cookbook. Ingredients:
1 1/2 lbs small red potatoes, cubed,not peeled |
1 teaspoon olive oil |
1 medium onion, chopped |
1 teaspoon dried thyme |
1 teaspoon dried basil |
1/2 teaspoon dried oregano |
Directions:
1. Simmer potatoes in water until tender, about 15 minutes. 2. Drain. 3. While they are cooking, saute onion in oil until tender. 4. Combine potatoes with onion and herbs. 5. Serve warm or at room temperature. |
