Herbed Oven Roasted Potatoes

Better than hash browns for a sunday brunch
Ingredients:
8 med. red potatoes
1 large garlic clove, minced
3 tbs olive oil
1 1/4 tsp oregano
1 1/4 tsp crushed rosemary
1/4 tsp salt
1/4 tsp red pepper flakes
Directions:
1. Pre-Heat Oven to 425°
2. Line a jelly roll pan with foil. Scrub and quarter the unpeeled potatoes. Coat with garlic, oil and seasonings.
3. Arrange in a single layer in the pan.
4. Bake for 30 minutes, turn potatoes then bake until golden brown.
