HERBED ORANGE RICE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Lindgren Estate in Allen, Texas in 1994. Ingredients:
4 tablespoons butter |
2/3 cup chopped celery with leaves |
2 tablespoons minced onion |
1-1/2 cups water |
1 tablespoon grated orange peel |
1 cup orange juice |
1 teaspoon salt |
1/8 teaspoons thyme leaves |
1 cup regular long grain rice |
orange sections for garnish |
Directions:
1. In saucepan over medium heat melt butter then cook celery and onion 5 minutes. 2. Add water, orange peel, orange juice, salt and thyme. 3. Heat to boiling then stir in rice. 4. Reduce heat to low then cover and simmer 20 minutes. |
