This recipe says to use Christmas variety of lima beans, but any work well in this recipe. It's from Country Living. Ingredients:
3 lbs lima beans, shelled (3 cups) |
2 -3 tablespoons olive oil |
kosher salt |
fresh ground black pepper |
1 bay leaf |
3 -4 sage leaves or 1 rosemary sprigs or 1 fresh thyme sprig |
extra virgin olive oil, for serving |
Directions:
1. Cover beans with 2 inches of water in a large pot; add olive oil, 1 teaspoon salt, bay leaf, and sage (or other fresh herb). 2. Bring to a boil, then reduce heat and simmer until beans are tender, about 30 to 45 minutes (depending on the age of the beans); turn off heat and let beans cool in their broth. 3. When ready to serve, reheat beans, in the same pot, over medium heat. 4. Pour off most of the broth and reserve for another use (like soup!). 5. Season with salt and pepper and drizzle with extra virgin olive oil. |
