A light casserole that is very easy to prepare. From The New American Diet. Ingredients:
3/4 cup lentils, uncooked |
2 2/3 cups water |
1/2 cup brown rice, uncooked |
1 onion, chopped |
1 1/4 cups white wine |
1/2 teaspoon basil leaves |
1/2 teaspoon salt |
1/4 teaspoon oregano |
1/4 teaspoon thyme |
1/4 teaspoon garlic powder |
4 ounces part-skim mozzarella cheese |
Directions:
1. Preheat oven to 350. 2. Combine all ingredients except cheese in an ungrease 1 1/2 quart casserole. 3. Bake uncovered for 1 1/2 - 2 hours. 4. Spread cheese on top and bake for additional 5 minutes. |
