I think it may be from Giada de Laurentiis, but I'm not positive. All ingredient quantities and serving sizes are to taste. If you're a huge rosemary fan, go nuts with the rosemary. Read more . Also, make sure all the ingredients are FRESH.
Ingredients:
long thing baguette
extra virgin olive oil
goat cheese
rosemary
thyme
parsley
lemon zest
salt
coarsely ground pepper
Directions:
1. Slice the baguette into thin slices (about 1/2 inch) and place on a baking sheet.
2. Drizzle the extra virgin olive oil over the slices suited to your love of olive oil.
3. Bake in oven at 425 degrees for 10 minutes, or until golden.
4. Coarsely chop the Rosemary, Thyme, and Parsley. Mix together in a small bowl with the lemon zest, salt, and coarsely ground pepper.
5. Form the goat cheese into balls of about 1 inch in diameter. Be sure to select a brand of goat cheese that is neither too runny, nor too dry. Also, to make the cheese easier to handle, be sure that you remove it from the fridge only moments before rolling.
6. Lightly coat the goat cheese balls in the herb mixture by rolling them in the chopped herbs.
7. Arrange the crostini and herb-covered goat cheese balls on a plate and serve.
