A feta spread with butter instead of sour cream or cream cheese. The rosemary adds a good flavor. You can also add some finely chopped Kalamata olives if you want to. Serve with pita or crackers. Ingredients:
3.4 cup (1 1/2 sticks) chilled unsalted butter, cut into pieces |
6 oz. feta cheese |
3 scallions, chopped |
1 tablespoon minced fresh rosemary |
2 teaspoons grated lemon peel |
Directions:
1. Mix all ingredients in food processor until smooth. 2. Transfer to a small bowl. Season with salt and pepper. 3. Cover and refrigerate. 4. Can be preparared up to 2 days early; let stand 1 hour at room temperature before serving. |
