Ingredients:
2 cups couscous
2 cups water
1 tablespoon butter
salt and pepper
1/2 bunch scallion, finely sliced
1/4 cup fine diced spanish onion
1 to 2 tablespoons rice wine vinegar
Directions:
1. Bring water, 1 tablespoon salt, and butter to a boil. Add couscous, remove from heat and stir quickly and thoroughly. Cover for 5 minutes. Moisture will be absorbed. Fluff with a fork. Add scallions, Spanish onion and rice wine vinegar
