Southern Living Ingredients:
1/2 cup frozen diced mixed vegetables (onion, red and green bell pepper, and celery) |
1 teaspoon olive oil |
2 lbs ground chicken |
1/2 cup fine dry breadcrumb |
1/3 cup light mayonnaise |
2 large eggs, lightly beaten |
2 tablespoons chopped fresh flat leaf parsley |
2 teaspoons all purpose greek seasoning |
1/2 teaspoon lemon zest |
1/4 teaspoon salt (to taste) |
1/4 teaspoon fresh ground pepper |
pita bread round, split |
sliced cucumber |
sliced tomato |
crumbled feta cheese |
plain yogurt |
kalamata olive |
lettuce leaf |
Directions:
1. Preheat oven to 350°. 2. Saute vegetables in hot oil in a small skillet over med-high heat 5-7 minutes or until vegetables are tender. 3. Stir together the ground chicken, next 8 ingredients, and sauteed vegetables in a big bowl just until combined. 4. Place mixture in a lightly greased 9 x 5 inch loaf pan. 5. Bake for 60-70 minutes or until a meat thermometer reads 165°; let stand 10 minutes before slicing. 6. Serve meatloaf slices in pita rounds with desired toppings. |
