From Wheat-Free Recipes & Menus by Carol Fenster, p. 60, c. 2004. You can use chicken broth, beef broth, or vegetable broth. Ingredients:
1 tablespoon olive oil |
1 cup onion, chopped |
1 (12 ounce) package long grain brown rice |
2 garlic cloves, minced |
3 cups chicken broth |
1 teaspoon dried basil |
1 teaspoon dried parsley |
1 teaspoon dried chives |
3/4 teaspoon black pepper |
1/2 teaspoon salt |
Directions:
1. Preheat oven to 350 degrees. Heat oil in a 3-quart, ovenproof, saucepan over medium heat. Add onion & saute, stirring frequently, for 5 minutes. Add the rice; cook, stirring for 2 minutes. Stir in remaining ingredients. 2. Cover & transfer to the oven. Bake 40 minutes or until rice is tender. |
