Herbed Broccoli and Pasta Soup |

From 1001 Low Fat Vegetarian Recipes Ingredients:
5 1/2 cups vegetable stock |
4 garlic cloves, minced |
2 -3 teaspoons dried thyme |
3 cups broccoli florets |
2 1/4 cups fusilli, uncooked |
2 -3 tablespoons lemon juice |
1/4 teaspoon salt |
1/8 teaspoon pepper |
Directions:
1. Heat stock, garlic and thyme to boiling in a medium saucepan. 2. Stir in broccoli and fusilli. 3. Reduce heat and simmer, uncovered until broccoli is tender and pasta is al dente, about 10 minutes. 4. Season with lemon juice, salt and pepper. Serve. |
