Herbed Baby Potatoes With Lemon Vinaigrette |

Here is another great potato Salad recipe, something that's different from the usual potato salads that we normally serve - Ingredients:
1 1/2 lbs round baby potatoes, peeled |
coarse salt |
1/4 cup extra virgin olive oil |
2 garlic cloves, thinly sliced |
1/4 teaspoon red pepper flakes |
1 tablespoon fresh lemon juice |
2 tablespoons fresh dill, finely choped |
2 tablespoons fresh flat-leaf parsley, finely chopped |
2 tablespoons fresh mint, finely chopped |
fresh ground pepper |
Directions:
1. Place potatoes and 2 tablespoons salt in a medium saucepan. 2. Cover with water, and bring to a simmer. 3. Cook until knife pierces through potatoes with little resistance, about 10 minutes. 4. Drain; transfer to a bowl. 5. Heat oil, garlic, and red pepper flakes in a small skillet over medium-low heat until garlic is golden brown, 15 minutes. 6. Pour over potatoes. 7. Add lemon juices and herbs and toss. 8. Season with salt and pepper. |
