Herb, Zucchini and Lemon Pasta |

I haven't tried this yet, but it sounds good! I got it from a Land O Lakes Butter packaging. Ingredients:
8 ounces rotini pasta, uncooked dried (about 2 3/4 cups) |
1/4 cup light butter, land o lakes |
1 cup red onion, chopped |
3 medium zucchini, slice 1/4 inch thick (about 3 cups) |
1/4 cup parmesan cheese, freshly grated |
2 medium tomatoes, cut into wedges |
2 tablespoons lemon juice |
1 teaspoon dried basil leaves |
1/2 teaspoon salt |
1/2 teaspoon pepper |
Directions:
1. Cook rotino according to package directions. Drain. 2. Meanwhile, melt light butter in a 12-inch skillet over medium heat; add onion and zucchini. Cook, stirring occasionally, until zucchini is crisply tender (5 to 7 minutes). Add cooked rotino and all remaining ingredients. Cover; let stand 2 minutes or until tomatoes are heated through. |
