Great side dish with beef or pork! Ingredients:
2 large potatoes, baked and cooled |
2 tablespoons butter, melted |
1/4 cup nonfat milk |
1 1/2 tablespoons parsley, chopped |
1/8 teaspoon thyme |
salt |
pepper |
paprika |
Directions:
1. Cut the cooked potatoes in half length-wise. 2. Scoop out the meat and place in a mixing bowl. 3. Add the butter, milk, herbs, and seasonings (Salt and pepper to taste). 4. Mix until smooth and then spoon the mixture back into the shells. 5. Sprinkle with paprika and bake at 350 degrees until lightly browned. (about 12-18 minutes). |
