From Real Simple magazine. You will have leftover salad dressing Ingredients:
6 cups lettuce (5-oz package store-bought herb salad mix) |
1 cup grape tomatoes, halved |
1 yellow bell pepper, sliced |
1 cup pita chips, broken |
1/2 cup feta cheese, crumbled |
1/3 cup olive oil |
3 tablespoons fresh lemon juice |
1 garlic clove, crushed |
1/2 teaspoon kosher salt |
1/4 teaspoon fresh ground black pepper |
Directions:
1. In a serving bowl, toss together salad mix, grape tomatoes, bell pepper, pita chips, and feta. 2. Whisk together dressing ingredients OR place in a lidded glass jar and shake to combine. 3. Drizzle salad with 4 tablespoons of dressing and toss well. |
