Herb Roasted Turkey Breast

This is a great dish to last the entire week. Perfect for that Sunday night dinner or a special occasions, then use the leftovers for lunches and dinners in a flash.
Ingredients:
1 (5 1/2 pound) turkey breast, fresh or frozen (thawed)
1 cup water
2 tsp seasoned salt
4 tsp italian seasoning
3/4 tsp ground black pepper
Directions:
1. Preheat the oven to 350 degrees F. Put the turkey breast on a rack in a shallow roasting pan. Mix together the next 3 ingredients. Spread the mixture under the skin and over the entire surface of turkey breast. Then, roast for 2 - 2 1/2 hours (or until internal temperature reaches 170 degrees F). Cover with a loosely styled tent of foil for the first hour, then remove and add the water to your pan. Occasionally baste the turkey with the juices from the pan. Remove turkey breast from oven and let stand, covered loosely with foil for 15 minutes. Place on a platter or carving board and serve.
