This is a low-cost side dish for cherry tomato lovers. Ingredients:
3 lbs cherry tomatoes |
3 tbsp olive oil |
salt & pepper |
1/2 cup chopped fresh parsley |
Directions:
1. Preheat oven to 450 degrees 2. Place tomatoes on a large rimmed baking sheet, drizzle with olive and season with salt and peper. Shake baking sheet bake and forth a few times to coat tomatoes with oil, salt, and pepper. 3. Bake, shaking pan once or twice, until tomatoes softened, but not falling apart, 10-15 minutes. Sprinkle with parsley while tomoatoes are still warm. Spoon into a bowl and pour in any juices that have accumulated in the bottom of the pan and serve. |
