This simple loaf is especially good with soups and stews, but slices are also tasty alongside fresh, green salads. The herbs make it a flavorful treat any time of the year. -Donna Roberts of Shumway, Illinois Ingredients:
3 cups king arthur unbleached all-purpose flour |
3 tablespoons sugar |
1 tablespoon baking powder |
1 tablespoon caraway seeds |
1/2 teaspoon salt |
1/2 teaspoon dried thyme |
1/2 teaspoon ground nutmeg |
1 egg |
1 cup fat-free milk |
1/3 cup canola oil |
Directions:
1. In a large bowl, combine the first seven ingredients. In a small bowl, whisk the egg, milk and oil; stir into dry ingredients just until moistened. 2. Transfer to a 9-in. x 5-in. loaf pan coated with cooking spray. Bake at 350° for 40-50 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely. Yield: 1 loaf (14 slices). |
