There was a restaurant called The Heritage near Cincinnati, which used to sell an herb mix for cheese spread that my mom loved. The restaurant closed (though has apparently re-opened), but since the herb mix is no longer available as far as I can tell I sat down with my memories of how it tasted and my mom's decade old jar of the mix to figure out what all was in it. Read more . I don't know that I got it right, but it's pretty damned close. Ingredients:
10 t dried marjoram |
15 t dried chives |
15/8 t granulated garlic (or garlic powder) |
6 t thyme |
1 1/2 t caraway |
Directions:
1. Mix the ingredients together, then use 1.5 T of the total for every 8 oz of cheese. The classic would call for just cream cheese, but I like 8 oz of cream cheese and 4 oz of soft goat cheese with enough herb mix to accommodate. 2. Whatever you use, allow it to sit and blend in the fridge for a day, and preferably leave out for a few hours before serving so it spreads easily. |
