Herb-Marinated Shrimp

To prepare this recipe indoors, place a large grill pan over medium-high heat until hot; coat grill pan with cooking spray. Place skewers on grill pan, and cook 3 minutes on each side or until done.
Ingredients:
1/3 cup basil leaves
1/4 cup mint leaves
2 tablespoons oregano leaves
1/2 teaspoon salt
1/4 teaspoon pepper
3 garlic cloves, halved
2 1/2 teaspoons extravirgin olive oil
1 1/4 pounds peeled and deveined large shrimp
cooking spray
Directions:
1. Combine first 6 ingredients in a food processor, and pulse until mixture is coarsely chopped. Add olive oil, and process until well blended.
2. Combine herb mixture and shrimp in a large bowl; toss to coat. Cover and marinate shrimp in refrigerator 30 minutes.
3. Thread shrimp onto 6 (12-inch) skewers.
4. Prepare grill.
5. Place skewers on grill rack coated with cooking spray; grill 3 minutes on each side or until done.
