To prepare this recipe indoors, place a large grill pan over medium-high heat until hot; coat grill pan with cooking spray. Place skewers on grill pan, and cook 3 minutes on each side or until done. Ingredients:
1/3 cup basil leaves |
1/4 cup mint leaves |
2 tablespoons oregano leaves |
1/2 teaspoon salt |
1/4 teaspoon pepper |
3 garlic cloves, halved |
2 1/2 teaspoons extravirgin olive oil |
1 1/4 pounds peeled and deveined large shrimp |

Directions:
1. Combine first 6 ingredients in a food processor, and pulse until mixture is coarsely chopped. Add olive oil, and process until well blended. 2. Combine herb mixture and shrimp in a large bowl; toss to coat. Cover and marinate shrimp in refrigerator 30 minutes. 3. Thread shrimp onto 6 (12-inch) skewers. 4. Prepare grill. 5.
