Awesome side dish to serve with any kind of meat. These also made a great appetizer. Yummy Ingredients:
2 large portobello mushrooms sliced |
1/3 cup extra virgin oil oil |
1-1/2 tablespoons soy sauce |
2 teaspoons cumin powder |
2 teaspoons cardamom powder |
2 teaspoons garlic powder |
1 large plum, seeded and mashed |
1 red bell pepper thinly sliced |
1 cup zucchini chopped small |
1/2 cup scallions finely chopped |
1 clove pressed garlic |
1 cup soaked macadamias |
3 tablespoons lemon juice |
1/2 cup water |
Directions:
1. Mix olive oil, soy sauce, cumin, cardamom, garlic powder and plum together. 2. Blend well then slice mushrooms and dip each slice into sauce covering well. 3. Let marinate 20 minutes. 4. Mix pepper, zucchini, scallions and garlic in bowl. 5. Drain marinade from mushrooms and toss with the vegetables. 6. Blend macadamias, lemon juice and water in blender until creamy. 7. Place marinated mushrooms on a plate and top with vegetables. 8. Spoon nut mixture over top. |
