Herb-Crusted Tilapia

This is incredibly awesome!
Ingredients:
4 tilapia fillets
24 ritz crackers
1 tablespoon parsley
1 tablespoon all purpose greek seasoning
2 tablespoons extra virgin olive oil
salt
pepper
1 egg
2 tablespoons skim milk
Directions:
1. Crush ritz crackers.
2. Add parsley, greek seasoning, salt, and pepper to ritz mixture.
3. Combine egg and milk.
4. Heat large skillet over med-high heat.
5. Dip fish in egg wash and ritz mixture.
6. Cook in olive oil in skillet 3 minutes on each side.
