My sister made these while we were visiting, they are so yummy. These are wonderful and so full of flavor. They are made with ham, eggs, cheese and yogurt with fresh chives and parsley. For those following weight watcher points these are 6 pts. Read more . a serving. Ingredients:
4 thin round slices of honey baked ham |
6 large eggs |
2 teas. dijon mustard |
1/2 cup plain lowfat yogurt |
1 1/2 cups shredded sharp cheddar cheese |
4 teas. fresh chopped chives |
4 teas. fresh chopped parsley |
Directions:
1. Preheat oven to 375 degrees. 2. Grease 4 ramekins with olive oil spray. 3. Line greased ramekins with ham slices. 4. In a medium bowl, beat eggs, mustard and yogurt. 5. Stir half of cheese into mixture. 6. In a small bowl, mix chives and parsley and add half of mixture to the eggs. 7. Stir well, then spoon into the ramekins over ham. 8. Sprinkle with remaining cheese and herbs. 9. Bake for 25 - 30 minutes or until golden. 10. Turn out onto serving plates. |
