A Mexican restaurant I used to go served this dish. I came up with what I think is their recipe or close to it. It's awesome and a different take on traditional chicken salad. Can be served with crackers, tortilla chips, or on bread as a sandwich. Ingredients:
4 cooked chicken breast halves, chopped |
1 (15 ounce) can pineapple chunks, drained |
1 cup coarsely chopped walnuts |
1 large cucumber, chopped |
1/2 cup mayonnaise |
salt and ground black pepper to taste |
6 bowl-shaped taco salad shells |
Directions:
1. Mix chicken, pineapple chunks, walnuts, cucumber, mayonnaise, salt, and black pepper in a bowl. Serve in taco bowls. |
