Ingredients:
2 pound(s) potatoes |
1 cup(s) mayonnaise |
2 tablespoon(s) vinegar |
1 1/2 teaspoon(s) salt |
1 teaspoon(s) sugar |
1/4 teaspoon(s) ground black pepper |
1 cup(s) celery thinly sliced |
1/2 cup(s) onion chopped |
2 hard-cooked eggs chopped |
Directions:
1. Peel potatoes and cut into 3/4-inch chunks. 2. In a 4-quart sauce pot, cover potatoes with water; bring to a boil over medium-high heat. Reduce heat and simmer 10 minutes or until potatoes are tender. Drain and cool slightly. 3. In a large bowl, combine mayonnaise, vinegar, salt, sugar, and pepper. Add potatoes, celery, onion, and egg. Toss gently. Serve chilled or at room temperature. |
