This is so easy...it's cheating! You can make your mates think you slaved all day. The secret is the prosciuto!!! It adds so much more flavor than ham. Ingredients:
1 pound smoked sausage, sliced |
1/2 pound italian prosciuto |
1/4 lb chorizo (optional) |
4 tablespoons butter |
1 cup chopped onion |
1 cup chopped celery |
1 cup chopped red bell pepper |
3/4 cup chopped green onions |
2 teaspoons minced garlic |
2 teaspoons creole-type seasoning |
2 3/4 cups chicken stock or water |
26 oz pomi chopped tomatoes or rotel if you like it spicy |
2 1/2 cups uncooked rice (i use treader joe's brown medley) |
1 pound crawfish tails, shrimp, lobster, or crabmeat |
Directions:
1. In a Dutch oven, saute sausage and ham until begins to brown. 2. Add butter, chopped vegetables, and garlic and saute until soft, stirring often. 3. Stir in seasonings, stock and tomatoes and bring to boil. 4. Add rice, stirring well. 5. Add seafood, stir, reduce heat to low, cover and cook until rice is done, about 40 minutes. |
