My mother sent me this recipe - not sure where she got it, but it is easy fudge without having to check the candy thermometer! Ingredients:
3t butter |
2/3 cups evaporated milk (small can) |
1 1/3 cups white sugar |
1/2 t salt |
1 1/2 cups miniature marshmallows |
1 1/2 cups chocolate chps |
1/2 cups chopped nuts (optional) |
1/2 t maple or vanilla flavouring |
Directions:
1. Combine butter, evaporated milk, sugar and salt in a microwave safe bowl large enough so that fudge has room to boil without boiling over (ex. 8 cups pyrex measuring cup). 2. Heat 2-4 minutes on full power until boiling. 3. Then heat medium-high for 5-6 minutes 4. Remove from microwave (use an oven mitt - it will be hot!) 5. Add marshmallow, chocolate, flavouring and nuts. 6. Stir vigorously until marshmallows are melted and blended. 7. Pour into a well-greased 9 inch pan. 8. Cool in fridge for one hour or in freezer for 20-30 minutes. 9. Cut in squares. |
