Heirloom Tomatoes With Burrata |

1/2 cup balsamic vinegar |
1/2 cup olive oil (extra virgin) |
1/2 teaspoon black pepper, freshly ground |
1/4 teaspoon sea salt |
4 cups arugula, loosely packed |
2 lbs heirloom tomatoes, cut into 1/4-inch-thick slices |
1/4 teaspoon black pepper, freshly ground |
1/8 teaspoon sea salt |
1 lb burrata cheese, quartered (or fresh mozzarella cheese) |
1/4 cup fresh basil leaf |
Directions:
1. Whisk together first 4 ingredients to make vinaigrette. 2. Arrange arugula on 4 plates. 3. Top with tomatoes; sprinkle with 1/4 teaspoon pepper and 1/8 teaspoon salt. 4. Top with cheese. 5. Drizzle with vinaigrette, and sprinkle with basil. |
