Heirloom Tomato, Spinach and Portabello Pasta |

A simple pasta dish loaded with veggies and lots of flavor. Ingredients:
1 1/2 cups cherry heirloom tomatoes |
2 tablespoons olive oil |
1/4 cup white wine |
1 garlic clove, minced |
1 bunch spinach |
1 grilled portabello mushroom cap |
salt and pepper, to taste |
8 ounces cooked linguine or 8 ounces spaghetti |
1 tablespoon fresh grated parmesan cheese |
Directions:
1. In a covered skillet or saucepan, cook tomatoes in olive oil unbtil they begin to burst. Add wine and garlic and cook 3 minutes. Add spinach and cook until wilted. Add mushrooms and cook until heated through. Season with salt and pepper and pour over pasta. Sprinkle with parmesan and serve. |
