Heirloom Tomato, Spinach and Portabello Pasta

A simple pasta dish loaded with veggies and lots of flavor.
Ingredients:
1 1/2 cups cherry heirloom tomatoes
2 tablespoons olive oil
1/4 cup white wine
1 garlic clove, minced
1 bunch spinach
1 grilled portabello mushroom cap
salt and pepper, to taste
8 ounces cooked linguine or 8 ounces spaghetti
1 tablespoon fresh grated parmesan cheese
Directions:
1. In a covered skillet or saucepan, cook tomatoes in olive oil unbtil they begin to burst. Add wine and garlic and cook 3 minutes. Add spinach and cook until wilted. Add mushrooms and cook until heated through. Season with salt and pepper and pour over pasta. Sprinkle with parmesan and serve.
