This is more of a summer recipe, but it was in todays newspaper so I thought that I would share. I haven't tried it myself , but I will come tomato season. Ingredients:
6 ripe heirloom tomatoes (in a range of colours) |
1 shallot |
pinch of course salt |
handful fresh basil |
Directions:
1. Cut tomatoes into wedges 2. Arrange on a platter 3. Chop shallot and sprinkle on tomato wedges 4. Sprinkle with salt 5. Shred basil over tomatoes. 6. Allow to sit at room temperature for 15-30 minutes prior to serving to let the flavors meld |
