                                                2 pounds assorted vine-ripened heirloom tomatoes  |  
                                                1 shallot, thinly sliced  |  
                                                coarse sea salt and freshly ground black pepper  |  
                                                1/4 cup fresh spearmint leaves, torn into pieces  |  
                                                1/4 cup fruity extra-virgin olive oil  |
