A delicious light and fluffy wheat free pancake. Invented from scratch by friend Roxanne during a visit to Geyserville. Ingredients:
1 cup hazelnut meal |
1 cup rice flour |
1/2 cup rolled oats |
1 1/2 cups milk |
2 tablespoons butter |
1 -2 tablespoon hazelnut oil |
2 teaspoons baking powder |
1 teaspoon baking soda |
1/2 teaspoon kosher salt |
3 eggs, separated |
Directions:
1. Mix first 9 ingredients into beaten yolks and,. 2. fold into soft peaked beaten whites. 3. Grill with a little Hazelnut oil . 4. Serve with butter and Maple Syrup. |
