Heavenly Vegetable Casserole |

Great served with roast beef. Ingredients:
1 pkg frozen french-style green beans |
1 pkg frozen baby lima beans |
1 pkg frozen petite peas |
2 green bell peppers, seeded, cut into strips |
1 1/2 cups heavy cream, whipped |
1 1/2 cups mayo |
grated cheddar cheese (or parmesan), about 3/4 cup |
salt and pepper, to taste (light on the salt) |
Directions:
1. Butter a casserole dish. Steam the vegetables to thaw them only. 2. In a bowl combine the cream, mayo and cheese. 3. Place the thawed vegetables in the casserole dish, cover with the cream mixture. Bake, uncovered, in preheated oven 325 for about 50 minutes, or until lightly browned and puffy on top. |
