Heavenly Sweet Potatoe Crunch |

We serve this as a side dish for Thanksgiven every year. I have been eating this since I was little. Ingredients:
4 cans yams(sweet potatoes in syrup) drained |
1 cup granulated sugar |
cinnamin |
nutmeg |
1/2 cup butter (melted) |
1 tsp vanilla |
1 cup light brown sugar |
1/2 cup flour |
1 cup pecans (chopped) i use about 1/2 cup more |
1/4 cup butter for topping |
Directions:
1. Pre heat oven to 400 degreees. 2. In large bowl smash the drained yams till smooth (small lumps is ok) 3. add in 1/2 cup melted butter, sugar,cinnamin,nutmeg, and vanilla (spices to your liking. I don't use a lot because it over powers the flavor of the yams, but you can use them to taste.) 4. then put into greased baking dish. 5. For the topping, combine the nuts,flour,and 1/4 cup butter. Use your hands and combine till butter is well distributed, looks like lumpy sand almost. 6. Take topping and sprinkle over top of yams and bake till topping is brown and crunchy. about 45m-60min. 7. All ovens are different, I had to bake it for about an 1hr and 20 minutes in mine. |
