OK, this is a longtime family favorite! I tracked it down at a funeral over 20 years ago, so we call it the funeral salad. I change around the flavors of jello or the fruits and create new tastes sometimes- but the original is always the best! Read more ! - I like to add mandarin oranges with the original recipe or in a new combos. Ingredients:
6 oz lemon jell-o |
1 cup hot water |
1 1/2 cups marshmallows, mini |
9 oz crushed pineapple, reserve juice |
6 oz reserved juice -- add water if needed to make the full amount |
2 lg apples, cored, diced, but not peeled |
3/4 cup pecan pieces |

2 eggs |
3/4 cup sugar |
2 tbs fresh lemon juice |
1 3/4 cup cool whip |
Directions:
1. Dissolve jell-o in hot water; when dissolved add marshmallows and stir till melted; remove from heat. Stir into a 13x9 pan and stir in pineapple juice. Chill until partially set. 2. Add remaining ingredients and allow it to completely set. 3. For topping: cook sugar, eggs, and lemon juice over a very low heat; stirring constantly until thick. When cooled, fold in Cool Whip and spread on top of the jell-o mixture. Refrigerate until ready to serve. |
