Heavenly Lime And White Chocolate Mousse Cake |

Delicious! And easy. Lime juice is mixed with gelatin; white chocolate is melted in cream, cream cheese is beaten with sugar and lime peel, whipped cream is added. All combined and poured into a ginger crust! :) Ingredients:

2 cups ground gingersnap cookies, (about 38 cookies) |
2 tablespoons sugar |
5 tablespoons unsalted butter, melted |
filling |
6 tablespoons key lime juice or fresh lime juice |
1 envelope unflavored gelatin |
2-1/2 cups chilled whipping cream |
9 ounces good-quality white chocolate, chopped (baker's or lindt) |
3 (8 ounce packages cream cheese, room temperature |
1 cup sugar |
1-1/2 tablespoons grated lime peel |
Directions:
1. FOR CRUST: 2. Combine crumbled cookies and sugar in processor 3. Process until ground 4. Add melted butter, process, using on/off turns 5. Press mixture onto bottom and 1-inch up sides of 10-inch diameter springform pan 6. FOR FILLING: 7. Place lime juice in a bowl 8. Sprinkle gelatin over to soften 9. Bring 1/2 cup of the whipping cream to simmer in heavy pan 10. Add white chocolate, stir until smooth 11. Stir in gelatin mixture 12. Cool slightly 13. Using an electric mixer, beat cream cheese, sugar, lime peel in large bowl 14. Slowly beat in white chocolate mixture into cream cheese mixture 15. In clean bowl, beat the remaining 2 cups whipping cream with clean dry beaters 16. Beat until peaks form 17. FOLD into white chocolate mixture 18. Pour filling into crust 19. Cover and refrigerate overnight 20. Release pan sides from cake 21. Transfer to platter, serve |
