Hot and Spicy and Meatless 2 by Dave Dewitt, Mary Jane Wilan, and Melissa T. Stock. Yield: 1 loaf Ingredients:
1 2/3 cups whole wheat flour |
1 tsp baking soda |
1/2 tsp salt |
1/2 cup butter, softened |
1 cup sugar |
2 eggs |
1 tsp vanilla extract |
1 cup mashed banana |
1/2 cup pineapple chunks |
3 green chiles, stemmed, seeded and chopped |
1/4 cup low-fat milk |
1 tbs lemon juice |
1/2 cup chopped walnuts |
Directions:
1. Preheat the oven to 350 degrees. Grease a loaf pan and set aside. In a small mixing bowl, combine the flour, baking soda, and salt. In a large bowl, beat the butter, sugar, eggs, and vanilla with an electric mixer until it is fluffy. Slowly add the flour mixture, using the mixer, then add the banana, pineapple chunks, chiles, and milk. Add the lemon juice and walnuts, and mix for a final 30 seconds. Pour the batter in the loaf pan. Bake for 1 hour, making sure not to overcook. |
