This is by far my favorite carrot salad. With the combination of coconut, pineapple, raisins and mayonnaise you can't go wrong. A holiday favorite but one I make during the summer as well. I have also sprinkled slivered almonds over the top and that is good as well. Read more . Enjoy Ingredients:
3 cups shredded carrots |
1 cup pineapple tidbits packed in juice drained but reserve 2 tablespoons liquid |
1/2 cup raisins |
1/2 cup miniature marshmallows |
1/2 cup mayonnaise |
1/2 cup frozen whipped topping thawed |
1 teaspoon coconut extract |
2 tablespoons flaked coconut |
Directions:
1. In large bowl combine first 4 ingredients. 2. In small bowl combine mayonnaise, whipped topping, extract and 2 tablespoons juice 3. Add to large bowl then cover and refrigerate until ready to serve. 4. Serve on lettuce leaves and top each serving with a teaspoon flaked coconut. |
