from an old german cookbook Ingredients:
10 medium new potatoes (about 3 1/2 pounds) |
1 1/4 lbs firm apple |
1 1/2 tbsp honey |
2 tsp salt |
1/2 tsp pepper |
2 1/4 cups cold water |
1/2 lb smoked bacon, diced |
2 medium onions, peeled and sliced into 1/4 inch rings, separated |
1 1/2 tbsp lemon juice |
Directions:
1. Peel and quarter potatoes, the cut potato quarters into 1/2 inch thick slices. Peel and core apples, then cut into 6 wedges per apple. Combine honey, 1 tsp of salt, pepper and water in large skillet. Add potatoes and apples; bring to a boil over medium high heat. Cover; reduce heat to medium. Simmer, without stirring, about 20 minutes or until potatoes are tender; do not overcook. 2. In medium skillet, sauté bacon over medium heat until crisp. Drain bacon on paper towels. Drain all but 2 tbsp bacon drippings from skillet. Add onion rings to drippings; sauté over medium heat 10 minutes or until tender and lightly browned. Stir remaining 1 tsp salt and lemon juice into cooked potatoes and apples. Spoon potatoes and apples into a heated serving dish. Top with cooked onion rings and bacon. Serve hot. Makes 8-10 servings. |
