Heather's Hearty Irish Stew

A quick and easy full-flavored stew for less than 400 calories per serving. A healthier version of Beef 'N' Guinness. Serve with Irish soda bread, or mashed potatoes. For a lower sodium version, use Campbell's low-sodium soup.
Ingredients:
1/4 lb. ground turkey, 93% lean
10 3/4 oz vegetable beef soup
8 oz. guinness draught
1/4 cup fresh parsley, chopped
2 cloves fresh garlic, minced
4 tbsp worchestershire sauce
1 tbsp cornstarch
1 tbsp skim milk
2 slices provolone cheese
Directions:
1. Brown ground turkey with garlic and parsley.
2. Add Guinness, soup, and Worchestershire sauce. Bring to a boil.
3. In a separate bowl, add cold milk to cornstarch and mix well. Add to soup, continue to cook 5-10 minutes or until reduced to a thick stew.
4. Spoon into 2 soup bowls. Cover each serving with a slice of provolone and allow it to melt. Serve hot with Irish soda bread or mashed potatoes.
